This is very healthy, light and refreshing soup. It not only fulfills your hunger but also is full of vitamins and iron.
Preparation time: 10 min cooking Time: 20-30 minServes: 2 - 3
Ingredients:
- 1/2 kg ripe red tomatoes
- 2 carrots
- 1 green chili, slit into half
- 1 1/2 tsp. sugar
- Butter as required
- Salt to taste
- Bread croutons [optional]
- Slit each tomato into 4 parts and roughlt chop carrots.
- Pressure cook tomatoes, chili & carrot with 2 cups water for 5 Min. Remove & cool.
- Blend it in a mixer & strain the puree.
- Keep the puree on medium gas mark.
- Add pinch of salt, sugar & a tsp of butter and let it boil for 5 min.
- Serve hot with a dollop of butter & bread croutons.
For kids avoid green chilies. You can also add black pepper for further taste enhancement.
