Tomato Soup


This is very healthy, light and refreshing soup. It not only fulfills your hunger but also is full of vitamins and iron.

Preparation time: 10 min                          cooking Time: 20-30 min

Serves: 2 - 3



Ingredients:
  • 1/2 kg ripe red tomatoes

  • 2 carrots

  • 1 green chili, slit into half

  • 1 1/2 tsp. sugar

  • Butter as required

  • Salt to taste

  • Bread croutons [optional]
Method:
  1. Slit each tomato into 4 parts and roughlt chop carrots.

  2. Pressure cook tomatoes, chili & carrot with 2 cups water for 5 Min.  Remove & cool.

  3. Blend it in a mixer & strain the puree.

  4. Keep the puree on medium gas mark.

  5. Add pinch of salt, sugar & a tsp of butter and let it boil for 5 min.

  6. Serve hot with a dollop of butter & bread croutons.
Tips:

For kids avoid green chilies. You can also add black pepper for further taste enhancement.
