Sweet Corn Veg Soup


This Vegetable Sweet Corn Soup is a very simple soup, suitable for all occasion.

Preparation Time: 10 mins. Cooking Time: 20 mins.
Serves 4.




Ingredients
  • 3/4 cup whole sweet corn kernels

  • 3/4 cup sweet corn, grated

  • 5 cups Clear Vegetable Stock

  • 1/4 cup chopped carrot

  • 1/4 cup Green beans chopped

  • 1/4 green onions chopped

  • 3 tbsp cornflour mixed with ¼ cup water

  • 1 tsp sugar (optional)

  • salt to taste

To serve
  • Chillies in Vinegar

  • soy sauce

  • chilli sauce
Method
  1. Put the stock in a pan and add the sweet corn kernels, carrot and beans.

  2. Cover and cook over a medium flame for approximately 10 minutes or till the vegetables are tender.

  3. Add the grated corn and simmer for another 5 minutes.

  4. Add the cornflour paste and simmer for some more time.

  5. Add green onion and simmer for 2 more minutes.

  6. Add the sugar and salt.

  7. Serve hot with chillies in vinegar, soya sauce and chilli sauce.
