This Vegetable Sweet Corn Soup is a very simple soup, suitable for all occasion.
Preparation Time: 10 mins. Cooking Time: 20 mins.Serves 4.
Ingredients
- 3/4 cup whole sweet corn kernels
- 3/4 cup sweet corn, grated
- 5 cups Clear Vegetable Stock
- 1/4 cup chopped carrot
- 1/4 cup Green beans chopped
- 1/4 green onions chopped
- 3 tbsp cornflour mixed with ¼ cup water
- 1 tsp sugar (optional)
- salt to taste
To serve
- Chillies in Vinegar
- soy sauce
- chilli sauce
- Put the stock in a pan and add the sweet corn kernels, carrot and beans.
- Cover and cook over a medium flame for approximately 10 minutes or till the vegetables are tender.
- Add the grated corn and simmer for another 5 minutes.
- Add the cornflour paste and simmer for some more time.
- Add green onion and simmer for 2 more minutes.
- Add the sugar and salt.
- Serve hot with chillies in vinegar, soya sauce and chilli sauce.
