Mixed Vegetable Salad


Healthy and Tasty, fibre rich treat that helps regulate Blood-Sugar levels.Good for all age with Exotic Herbs and tasty dressing with goodness of Olive Oil.

Preparation Time: Cooking Time: nil
Makes 4 servings



Ingredients:
  • 50gms French beans

  • 3-4 carrots ( preferrably red)

  • 1 small cabbage

  • 100gms Broccoli (cut into florets)

  • 1 Capsicum

  • 1 Tomato (cut into thin rings)

  • 2 green chilies(slit vertically)

  • Finely Chopped coriander leaves

  • 1 lemon juice

  • Black pepper powder to taste

  • salt to taste
Method:



1. Cut and Steam the vegetables. Alternatively you can mix all the vegetables in a micro-safe bowl with little water and salt and microwave it on high for 5 min.

2. Add tomatoes, green chilies, salt, pepper powder and lemon juice, and mix well.

3. Put in refrigerator to cool.

3. Garnish with coriander leaves and serve.
