Gajar Ka Halwa


This delicious, rich pudding loaded with nuts and dried fruits is well-known all over the world.

Preparation time:15 mins                 Cooking time: 45-60 mins

Serve: 6


Ingredients:

  •  1 kg Carrot

  •  1.5 lts Milk

  • 250 gms Sugar

  • Cardamom powder - a pinch

  • 10 Cashew nut (roasted)

  • a handful of Raisins

  • 3 tbsp Ghee

  •  5-10 Badam  (optional)

  •  5-10 Pista (optional)
Method
  1. Peel and grate the carrots.

  2. Take the pan and Biol milk in it.

  3. Then add grated carrot.

  4. Stir well on low flame.

  5. Boil till milk reduces and almost disappeared.

  6. Once it starts thickening stir continuously.

  7. Add Ghee and keep stirring. Do not let it stick to the pan.

  8. Cook further till all the milk evaporates and the carrot changes color to deep red.

  9. Now add cardamom powder and sugar.

  10. Stir on low flame till the ghee oozes out.

  11. Garnish with cashew nuts, pista, raisins  and almonds.

  12. Serve hot or cold.
Tips:

For diabetic people and Those who are watching weight add sugar-free powder instead of Sugar and put 1 tbsp of ghee instead of 3.
