Pasta salad is a dish prepared with one or more types of pasta,usually chilled, and most often tossed in a vinegar, oil or mayonnaise-based dressing. It is typically served as an appetizer or a main course.
Preparation Time: 10-15 min. Cooking time: 10 min.Serves: 4-5
Ingredients:
- 1 1/2 cups shell, bow-tie or Penne pasta
- 2 cups broccoli, cut into small florets
- 1 cup cauliflower, cut into small florets
- 1 cup bell pepper(different colors)
- 1 cup sliced fresh mushrooms (optional)
- 1/2 cup chopped green onion
- 1/2 cup Fresh cream
- 3-4 tbsp Mayonnaise
- 1/4 cup sliced black olives
- 1 tomato, chopped
- 2 tbsp Lemon juice
- 2 tbsp Extra virgin olive oil
- 1 tbsp honey
- Salt and pepper to taste
- Cook the pasta according to the package directions. Drain and rinse with cold water.
- Steam Broccoli, cauliflower and mushrooms.
- In a large salad bowl, combine pasta, broccoli, cauliflower, mushroom ,onion fresh cream and Mayo.
- In another bowl mix lemon juice, honey, Extra virgin oilve oil, salt and pepper.
- Toss Mixed salad with the above dressing, then cover with cling foil and chill for 4 hours.
- Before serving, toss the salad with the olives and tomato .
- Serve with garlic bread or baguette bread.
- To make it Fat free and low calorie, do not add mayo and fresh cream to the salad.
- You can also add other vegetables like Baby corn, Cottage cheese, corn kernel etc.
