Pasta Salad


Pasta salad is a dish prepared with one or more types of pasta,usually chilled, and most often tossed in a vinegar, oil or mayonnaise-based dressing. It is typically served as an appetizer or a main course.

Preparation Time: 10-15 min.     Cooking time: 10 min.

Serves:  4-5

Ingredients:
  • 1 1/2 cups shell, bow-tie or Penne pasta

  • 2 cups broccoli, cut into small florets

  • 1 cup cauliflower, cut into small florets

  • 1 cup bell pepper(different colors)

  • 1 cup sliced fresh mushrooms (optional)

  • 1/2 cup chopped green onion

  • 1/2 cup Fresh cream

  • 3-4 tbsp Mayonnaise

  • 1/4 cup sliced black olives

  • 1 tomato, chopped

  • 2 tbsp Lemon juice

  • 2 tbsp Extra virgin olive oil

  • 1 tbsp honey

  • Salt and pepper to taste
Method:
  1. Cook the pasta according to the package directions. Drain and rinse with cold water.

  2. Steam Broccoli, cauliflower and mushrooms.

  3. In a large salad bowl, combine  pasta, broccoli, cauliflower, mushroom ,onion fresh cream and Mayo.

  4. In another bowl mix lemon juice, honey, Extra virgin oilve oil,  salt and pepper.

  5. Toss Mixed salad with the above dressing, then cover with cling foil and chill for 4 hours.

  6. Before serving, toss the salad with the olives and tomato .

  7. Serve with garlic bread or baguette bread.
Tips:
  • To make it Fat free and low calorie, do not add  mayo and fresh cream to the salad.

  • You can also add other vegetables like Baby corn, Cottage cheese, corn kernel etc.
