Gobhi Paratha


Good and Healthy breakfast and even a tiffin recipe.

Preparation time: 20min                                      Cooking time: 20min

Makes- 6-7 parathas




Ingredients
For rotis:
  • Whole wheat flour- 2cups+2tbsp

  • Salt- 1/2tsp

  • Water as required to make the dough

  • Oil- 2tsp
For the stuffing:
  • 1 large, Cauliflower- grated

  • 1 tsp Cumin seeds

  • 1/2 tsp Amchoor (dry mango powder)

  • 1/4tsp Garam masala

  • 1/2tsp Coriander seed powder

  • 1/4tsp Turmeric

  •  1 Green chilli , finely chopped

  • 1/4tsp Red chilli powder

  • 1/2 tsp Coriander leaves

  • Salt to taste

  • Oil or ghee to shallow fry the parathas
Method
  1. Mix the whole wheat flour, salt and oil in a bowl.

  2. Add water gradually and knead the ingredients to form a soft pliable dough

  3. Cover and allow the dough to rest for 30min

  4. Heat oil in  a pan and add the cumin seeds

  5. Add the green chilli , grated cauliflower, turmeric, coriander powder and salt and fry for 3-4 min

  6. Add the garam masala and fry for a minute more and take off the heat.

  7. Stir mixture with coriander leaves

  8. Cool the mixture completely before making the parathas.

  9. Divide the dough and the stuffing into 7-8 portions

  10. Roll one portion of the dough into a circle of 3" in diameter and place a portion of the stuffing mixture in the middle.

  11. Wet the edges of the circle with some water and gather all the sides and bring it to the middle and seal tightly.

  12. Roll out again into a circle of  6" to 7" in diameter with the help of a little flour.

  13. Shallow fry the paratha on hot tawa or girdle using  ghee or oil until brown spots appear on both sides.

  14. Repeat the same process for the remaining dough and stuffing to make the remaining parathas.

  15. Serve hot with yogurt, green Chutney or pickle.
