Mini Fruit Tarts

 Simple and Easy baking. Excellent for kids birthday or even cocktail diners.










Ingredients

crust
  • 2 1/4 cup all purpose flour

  • 1 tbsp granulated sugar

  • 2 sticks (8oz) salted butter

  • 1/4 cup cold water

Filling
  • 11/2-cups diced apple or mixed fruits

  •  3/4- tspn  mixed spice

  •  1/8-cup shred, almonds

  •  grated rind and juice of a lemon

  •  4 tbspn, sugar

  •  1/4-cup raisin

  •  1/4-cup sultanas (munnaka)

  •  1 tblspn, butter
Method

For Pastry
  1.  In a large bowl, whisk flour, salt and sugar together.

  2. Using your fingers or food processor, cut butter into flour until it resembles a coarse meal.

  3.  Add water and mix until it all comes together. Form a disc and refrigerate from 30 minutes.

  4. Preheat oven to 200 degrees C.

  5. Roll out the dough and cut out 12 circles that would fit into muffin tins. Don't stretch the dough too much or else it'll shrink when you bake it.

  6. Poke bottoms of crust with a fork.

  7. Line crust with aluminum foil and fill with dried beans or rice to serve as pie weights.

  8. Bake for 15-20 minute or until it's lightly browned.

  9. Let it cool and fill it with pastry cream or Mixed Fruits.
For Filling
  1. Mix all the ingredients in a bowl except butter.

  2. Fill in the baked tart and top it with melted butter.

  3. Serve immediately
